such as apricots and pip fruit such as apples, can be used fresh or dried in baking. Before drying, the seeds/stones are removed and the fruit is halved or sliced. Before use, they are soaked in water for a few hours. Dried fruit can contain up to 2000 parts per million sulphur dioxide as a preservative.
