bread dough that is well developed, is of the correct temperature and consistency with the correct balance of ingredients to provide optimum gas retention. lt has the right balance between dough extensibility and elasticity, and makes a loaf with a fine, even crumb texture. If the bread is unlidded it will tend to have rounded rather than square corners and be bold, that is, stand up in the tin rather than slouching.
