(a) chemical or biological agent used to aerate dough or batter before baking, thus providing the internal struclUre of the baked product. Common examples are baking powderand yeast;
(b) process where gas is released within a dough or batter causing bubbles to form, expanding the dough and causing it to rise.
Leavening is also assisted by air and steam.
