transfer of heat through the movement of heated air. Many ovens use convection to get heat from elements or gas flames to the baking tins. Often assisted by having fans in the oven to move the air around. Many large, modern bakeries rely on this as a main source of heat transference, reducing baking time and improving baking performance.
