also called sponge fingers. Made using a sponge sandwich recipe. Batter is dropped or piped on to a tray using a piping bag and sprinkled with castor sugar before baking. May be finished by sandwiching with jam or cream, dipping in chocolate, or placing in paper cases with fruit and cream. Sponge fingers may also be used to decorate the outside of a gateau.
