high ratio Genoese

type of Genoese sponge common in commercial manufacture. Contains more liquid and sugar than other Genoese sponges and makes use of high ratio fat. Usually very sweet due to high sugar content and the addition of fondants. See also Genoese sponge, light Genoese, boiled Genoese and heavy Genoese.
