icing made from boiled sugar and water. It is non-aerated, and consists of small sucrose crystals suspended in a saturated sugar solution. Used as an icing, fudge or filling, or as a base to which modifying ingredients can be added. Usually appears as a smooth, creamy, white paste. Gives iced cakes a glossy appearance.
