snack food made with deep-fried sweet dough. Usually circular with a hole in the middle, but also made in the shape of balls, fingers or stars. Hot doughnuts may be dusted with sugar and spice; cold doughnuts may be glazed with icing or filled with jam, custard, cream or fruit. Yeast-raised doughnuts have a light, open texture. Cake doughnuts are chemically leavened, tender and have a more cake-like texture. They have a crisp brown crust.
