occurs if wheat grain is exposed to warm, humid or wet weather, causing the grain to sprout before it is harvested. This causes an increase in the amount of the enzyme alpha-amylase, which digests the starch in dough into sticky sugars and can cause the bread crumb to collapse into a sticky mess. Sprout damage can occur before the sprout is actually visible on the grain.
