conventional sponge is a light cake made by beating eggs and sugar vigorously to provide aeration, then adding sifted soft flour. Can also be made using the all-in method, where all ingredients are added and mixed together. Sponges are generally lighter than batter cakes. High ratio sponges use high ratio flour and are popular for making Swiss rolls.
