tender biscuit with a soft, melt in the mouth feel. Usually the surface is pricked with a fork and sprinkled with castor sugar before it is baked to a pale golden colour. May be sliced from a round or cut into squares or shapes. A traditional Christmas snack, originating in Scotland. Its name comes from the high butter (shortening) content.
