sodium chloride, a basic ingredient used in the manufacture of bakery products. A compound of two elements: sodium (Na) and chlorlne (CI). Available in various sized particles such as rock salt or table salt. Used to enhance the flavour of baked products and other food. Slows down the fermentation process so acts as a preservative. Can be used to adjust the level of sweetness. Plays a small part in strengthening the proteins present.
