milling process where grain is fed between a series of rollers that shear, scrape and then crush the particles. The stages of roller milling are the break stage, reduction stage and sometimes a high speed finishing method carried out by an entoleter, a machine which crushes any large particles remaining. Most New Zealand flour is produced in this way.
