list of ingredients and instructions for producing a particular product, with the aim of producing the same product every time. Recipe components may be a name, ingredient amounts, method, yield, equipment required, preparation and baking times, and directions for finishing the product. Standardised recipes are customised for a particular operation, with specific instructions to ensure baked goods are uniform. They allow control of quantity and yield and are used at all levels of commercial baking. Instructional recipes are used as learning tools. They give a general procedure and allow for some variation, which may include the use of different preparation and mixing techniques. See also formula.
