blend of mixed spices such as allspice, cloves, cinnamon, nutmeg and ginger used to give a spicy £lavour to baked goods, puddings and cooked fruit. It can be a powder, a mixture of essential oils in a solvent, or an essence. In buns it slows down yeast activity so extra time is needed to allow the buns to rise.
