high quality confectionery paste made from ground almonds and sugar mixed with egg white. May be rolled out and used to cover celebration cakes and fancies, to give flavour to a cake base or shaped into small cake decorations such as carrots on a carrot cake. May also be mixed with an equal quantity of sugar to make almond paste.
