M fault

term used to describe the collapse of a cake in the middle as a result of too much sugar or baking powder. The fault occurs when the cake rises more than the structure can support. The cell structure breaks, releasing gas, and the centre collapses. Can be corrected by reducing the amount of sugar or baking powder, or increasing the amount of liquid.
