root (rhizome) of the ginger plant used fresh or dried and ground. It has a sweet, spicy, pungent taste. Fresh ginger is finely grated before use, while ground ginger is used to flavour cakes, puddings, biscuits such as ginger snaps, and gingerbread. Can also be candied.
