evaporated milk

unsweetened, heat concentrated canned milk, with most of the water removed. Must be refrigerated after opening and used within a couple of days. Can be diluted and used as milk, or, undiluted, can replace cream. Sometimes used to make ice-cream. Not used in baking very much anymore; dried milk is preferred.
