(a) that part of the milk with a high content of fat. Whipped cream is fresh dairy cream whipped to incorporate air and increase volume, used for filling, pipihg or topping on baked goods such as cakes, sponges, doughnuts and profiteroles;
(b) beat one or more ingredients, usually butter and sugar, until light and fluffy. The process dissolves the sugar, resulting in a light texture in the baked product. May be done using an electric beater, a mixer, a whisk or even the hands. (See also creaming method).
