liquid form of sugar refined from corn. A mixture of glucose and dextrins is produced by boiling corn starch in a weak acid and then neutralising it. May be used in many different ways including in confectionery production. Also helps prevent grittiness in icings by decreasing crystallisation, and adds flavour to baked goods. A variety of syrups are available, with varying colour and sweetness.
