in general, prepare something for use. Wheat is conditioned (sometimes called tempering) by adding small amounts of water and holding it in bins for a few hours so that the water has time to penetrate the wheat grains. This makes the bran tougher and easier to separate from the endosperm. The larger pieces produce less bran dust in the flour.
