refers to the colour grade of flour, which is dependent on the flour extraction rate in the mill, and influences crumb colour in bread. A Colour Grade instrument measures the yellowness of the flour, which gives an indication of the amount of bran present. More bran gives a higher colour grade number and the bread produced is likely to have a darker crumb colour, making poor quality white bread.
