tasteless gum extracted from certain types of Pacific and New Zealand seaweeds. Contains an unusual polysaccharide that acts as a powerful gelling agent; 30 grams of agar will set 5litres of water. Ranges from pale straw to mid-brown in colour. Used to make confectionery such as marshmallow pie filling, meringue and ice cream. Also called agar-agar and isinglass.
