Researchers responsible for a new study have concluded that the idea that wheat causes obesity or sickness is misguided. The new study published in the Journal of Cereal Science by a team from Maastricht University in the Netherlands and the Crop Science group of Rothamsted Research UK set out to dispel myths about wheat consumption, caused they said, by non-peer reviewed publications.…more

Food Standards Australia New Zealand (FSANZ) today released a consultation paper about the qualifying criteria for dietary fibre nutrition content claims. FSANZ Chief Executive Officer Steve McCutcheon said FSANZ agreed before the gazettal of the new Nutrition and Health Claims Standard to consult further on the criteria for dietary fibre claims. …more

Judging for the top young bread baker in New Zealand took place in Auckland yesterday with Robert Reihana from Quality Bakers in Nelson winning the award of 2013 "Young Bread Baker of the Year". In winning this award, Robert demonstrated to the judges an ability to excel in three key areas: practical baking, theoretical knowledge of baking technology, and presentation of research into consumer attitudes to packaged bread and their changing purchasing habits. …more

Kidds Cakes and Bakery from Christchurch was unanimously chosen by the judges as the clear winner of the Great New Zealand Hot Cross Bun Competition, which had 68 entries overall from around the country. Kidds Cakes’ focus on flavour was rewarded, with the judges saying the use of lemon juice to marinate the fruits worked well for both the flavour and the texture of the buns. Chief judge Mike Meaclem of the Baking Industry Association of New Zealand says the buns had a lovely light texture, and a nice bold look to them with a perfect white cross. …more
