Ulrick & Short adds to tapioca starch fat replacement range.

Bakeryandsnacks.com (23/12/08) reported that Ulrick and Short has launched a clean label tapioca based starch for fat replacement in cakes and muffins. It claims that it’s Synergie L526 could replace up to 25% of fat in bakery products, and therefore reducing costs and help industry meet fat reduction targets. The product comes in powder form and is designed to replace vegetable oil or margarine. It can be mixed directly with dry ingredients without being pre-hydrated. The reformulation process should not be difficult for industry as the product can replace margarine or vegetable oil on a one-to-one basis. The company has also released a tapioca based fate replacer for use in ready made sauces.
