New coating can prevent bread spoilage, says Repsol
Bakeryandsnacks.com (15/12/08) reported that The antimicrobial wax paraffin coating, Rycoat F-100, for paper or cardboard packaging has been given a commercial release and is now ready to undergo testing with industrial partners. The product incorporating cinnamaldehyde fortified cinnamon essential oil has undergone testing which suggest it will inhibit white bread spoiling. Results have shown that R. stolonifer fungus constitutes along with Aspergillus and Penicillium have been completely inhibited by the active coating formulation. The cinnamon based paper will be also prevent spoilage in other food products such as fruit and vegetables
